Summer’s lazy days have been dripping into lazy evenings that translate to lazy dinners. It’s another reason I love having a batch of my favorite chicken salad stashed in the fridge. It’s light but filling, savory and sweet and totally versatile served as a sandwich, as a salad, on crackers, or in lettuce cups. I mean, who doesn’t love a classic chicken sal?
