Hey hey and happy Friday.
This week was a whirlwind with plenty of tasks, to-do lists, projects, and things that actually got done. Finally! That meant fast eats were on the menu. And when it comes to lunch, nothing is faster to whip up than a simple tuna salad sandwich. I took my classic recipe and added capers and pepperoncini to give it even more pickled flavor. Naturally, I layered each bite with potato chips and chomped one of my killer garlic dill pickles alongside. Oh man, I cannot wait for summer! Gimme all the sandwiches!
But before I get too far ahead of myself, it’s time to dig into this week’s Friday Faves.
