Hello hello and happy Friday!
My tulips are blooming! The trees are flowering! The sky is blue and the grass is green! IT IS SPRING! And I am here for it because that means we are nano-seconds from spring produce and just a few more til summer’s arrives! I’m not waiting though. This week I made a classic summer dinner for me and my mom and it was all I needed to get inspired for more. We’re both huge shrimp lovers so I made us my shrimp scampi pasta with a side of cheesy zucchini alongside a simple Caesar salad. It was exactly what we were craving — light, bright, and oh-so-flavorful. If you’re feeling spring too, give it a try.

Always love these lists Heidi! I am totally digging on this recipe and adding to my must try soon – Sloppy Joe stuffed peppers, and also Olive Oil Brownies. I have been subbing Olive Oil with a lot of baking recipes calling for canola oil or any seed oil for that matter, and they usually turn out so much better! Thanks for the constant inspiration!
