Hey hey and happy Friday!
While I love to cook at home, I just as much love eating out—maybe more. With our daughter away at school, it’s just me and the man, and like many empty nesters, dining out is our get-out-of-the-house/jail card. The funny thing is, if I eat something especially delish when we eat out, I usually end up analyzing and dissecting the ingredients so I can make it at home. Ironic, isn’t it? This week I had a yummy version of this Thai chicken dish at one of our favorite restaurants. Their version had more onions and more heat than my recipe. After spooning up every last morsel from my plate, I know my future making of the dish will include tweaking my recipe—and making it with more onions and more heat. That’s the fun of cooking—and eating. Just like in life, things don’t always have to be the same. You can always pivot and adapt.
