Hello and happy Friday!
It’s that time of year when we’re bellied up to the counter and taking a peek over to spy that Spring is almost, nearly, just about here. Wellllll, maybe not quite. But it is staying light later into the eve and I’ve ditched my winter coat for my favorite down vest. So yes, change is in the air. That means it’s time to buckle down and eat right because those sweaters that hide the bulge are going away and tank tops are coming in hot. That’s why my breakfasts have turned into a mid-morning brunch and one of my faves to make is this easy egg and spinach recipe (I add mushrooms and tomato if I have them). I serve it with a simple salad dressed in my favorite dressing I make to last throughout the week. It’s light. It’s easy. It’s filling. The perfect way to start the day. And the week!
