Hello friends, happy Friday!
Chop, chop, we’re still feeling high on our January goals, am I right? Yes! Yes! Yeaaaas. It’s so funny that even without thinking, plotting, or planning, my cravings lean to fresh and crunchy once the holidays pass. That’s why this crispy, crunchy Italian chopped salad has been on my husband’s and my meal plan over and over again these past two weeks. I tweaked it by using my meal-prepped cannellini beans instead of chickpeas because I believe we should use recipes as roadmaps, then make them our own. How good does that sound for a New Year goal? I’m in!

After watching the first few episodes on HULU, we caught this TV show again on ABC’s recast (best decision by a network in forever) then had to rewatch it all plus all those missed to the end. It’s hilarious and witty and original and suspenseful. It is THE BEST SHOW ON TV RIGHT NOW. Don’t miss it.
