White meat chicken may win the popularity award, but if you ask me, chicken thighs are highly underrated and deserve more love. They’re so tender and juicy and cook faster too. I have several chicken thigh recipes I love, like my simple baked chicken thighs (that go with anything), crispy smoked paprika chicken thighs, and my honey mustard chicken thighs. This teriyaki chicken recipe comes from blogger friend Kristen Doyle, of Dine and Dish. I was drawn to her recipe for Baked Teriyaki Chicken Thighs because I needed an easy dinner to get on the table that night and I’m pretty much always happy to swap out a few extra calories for some tender, juicy chicken. These easy chicken thighs come together in just 30 minutes, plus, they feature an easy homemade teriyaki sauce that’s so delicious.

Teriyaki Chicken Ingredients List
- Waterโthis mixes with the cornstarch to make a proper cornstarch slurry (which ensures there won’t be any lumps when you add the cornstarch)

- Boneless skinless chicken thighsโI prefer boneless chicken thighs over chicken breasts because they cook faster, they’re tender and juicy, and less prone to drying out

How to Make Teriyaki Chickenย
- Make the teriyaki sauce. Combine the water and cornstarch in a small bowl and whisk together until smooth. Then combine the cornstarch slurry, sugar, soy sauce, vinegar, garlic, and pepper in a small saucepan over low heat. Let simmer, stirring frequently, whisking occasionally, for about 2-3 minutes, or until the sauce thickens and bubbles.
- Prep the chicken thighs. Using scissors, remove any pieces of fat from each chicken thigh. Place chicken pieces in a 9×13-inch baking dish sprayed with Pam cooking spray. Pour ยฝ half of the sauce over the chicken, brushing each piece so it is coated.
- Bake and sauce. Bake in a 425ยฐF oven for 30 minutes. Turn pieces over, pour on remaining sauce, and bake for an additional 30 minutes, or until chicken juices run clear.ย ย
FAQ and Recipe Tips
- What is the difference between teriyaki sauce and teriyaki marinade? There is no difference; they can be used interchangeably. Just be sure not to cross-contaminate when working with meat or fish.
- Does teriyaki sauce go on before or after cooking? It can go on either or both! In this case though, I like to pour it over the chicken as it cooks.
- To make an even thicker teriyaki sauce, you can simmer it for a bit longer to make it more of a glaze.
- If you wanted you could use brown sugar or honey instead of granulated sugar and some freshly grated ginger would be a yummy addition to the sauce
- For some color and texture, top with sesame seeds and green onions
Storage
Leftovers will keep stored in an airtight container in the refrigerator for a few days. The teriyaki sauce will keep for up to two weeks.

Teriyaki Chicken
Ingredients
- ยฝ cup granulated sugar
- ยฝ cup soy sauce
- ยผ cup rice wine vinegar
- 2 cloves garlic , minced
- 1 teaspoon cornstarch
- ยผ teaspoon freshly ground black pepper
- 12 boneless, skinless chicken thighs

Notes
- Be careful not to cook the teriyaki sauce for too long, otherwise, the sugars will crystallize and the sauce will become grainy.
