This Greek Cobb salad is like the Woodstock of salads, bringing so much to one place to deliver peace, love, and joy with a trancelike glow that makes an incredible memory for anyone who experiences it. And just like Woodstock, you too will have wished you’d been there to eat it even if you didn’t.
I heard back from so many of you on my email list where I shared this healthier turkey sausage pasta dinner, when you answered my question, do you want more healthy recipes? The answer was a resounding, YES! like this reply from reader Ann, who wrote:
“Hi I would love any help cooking delicious meals “heart healthy”. I must live a low sodium diet/low fat/etc.., but I miss all the yummy comfort foods I loved. Any help would be appreciated!!”
I admit, this mediterranean Greek Cobb salad may not be everyone’s idea of typical “comfort food”—aka fried, buttered, and gooey-leyed cheesed—but to me, anything that shines with my favorite mediterranean flavors is a comfort to my taste buds—and a whole lot healthier too.
The Mediterranean Diet Salad
The Mediterranean Diet was named 2019’s diet of the year, and not because it’s a trend or gimmicky fad, but because it embraces a lifestyle. A lifestyle I totally want to emulate. With whole foods and flavor taking center stage, this diet is one I am 100% behind and encourage others to follow suit. I mean, can we all agree our worldly wish is to live in the dreamy Mediterranean, if only vicariously through our diets alone?
This heart-healthy salad bridges all the Mediterranean flavor gaps. It has lean proteins. Crunchy lettuce. All of my favorite pickled and fresh flavor bites. And it’s drizzled with one of my favorite homemade Greek salad dressings.

Ingredients for a Greek Cobb Salad
One glance at the ingredient list may to the naked eye look long, but know that just like many salads, you can edit and abbreviate the ingredient suggestions to fit your tastes and shopping whims. It’s easily customizable to make just for one (my favorite kind of lunch) or for a whole party on a platter (put your guests to work and serve themselves).
Here’s the list of ingredients ideas to include in your own Greek Cobb salad lovingness:
- romaine lettuce
- marinated chickpeas
- roasted red bell peppers
- red onion — to mellow it out, soak sliced red onion in water for a few minutes
- greek-marinated chicken breast — store-bought rotisserie works too
- cucumbers — try the seedless Persian cucumbers, they’re so sweet.
- avocado — always a good reason to love good fats
- kalamata olives
- marinated artichoke hearts
- hard boiled egg — for the perfect peel pressure cook eggs in the Instant Pot for 4 minutes with 4 minutes natural release
- tomato — a great source of antioxidant busting vitamin C
- feta cheese — my friend Tamar turned me onto Israeli feta—it’s incredible!
- chopped fresh parsley — this is one instance where I prefer curly parsley for sure. It’s freshness is like adding another type of lettuce to the mix, and unmistakably Mediterranean

Greek Salad Dressing
The spunky, vinegar bite of Greek dressing is hands down one of my favorites and in reality can be used in any Italian or Mediterranean salad.
Because there are so few ingredients in this recipe be sure to use the best quality you can afford since there’s nothing to mask the taste of each one.

Greek Cobb Salad
Ingredients
For the Marinated Chickpeas
- 1 15 ounce can of garbanzo beans
- ¼ cup extra-virgin olive oil
- ¼ cup red wine vinegar
- 1 small clove garlic , pressed or minced
- 1 teaspoon dry mustard
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- ¼ teaspoon kosher salt and freshly ground black pepper
For the Greek Salad
- 3 small heads romaine lettuce , chopped
- 3 hard boiled eggs , peeled and chopped
- 3 plum tomatoes , chopped
- 2 cups cooked chicken breast , chopped
- 2 avocados , chopped
- 1 cucumber , chopped
- 1 cup marinated artichoke hearts , chopped
- 1 cup feta cheese
- ½ cup sliced roasted red bell pepper
- ½ cup sliced kalamata olives
- ½ cup chopped curly parsley
- ¼ cup sliced red onion
- ½ cup Greek salad dressing
Instructions
For the Marinated Chickpeas
- Combine the olive oil, red wine vinegar, garlic, dry mustard, thyme, oregano and salt and pepper in a small bowl or jar and whisk or shake the dressing well. Place the drained chickpeas in a bowl and pour 1-2 tablespoons of the dressing on the chickpeas to marinate for 30 minutes.
To Assemble the Salad
- In a large bowl or on a large platter, layer the lettuce with the marinated chickpeas, hard boiled eggs, tomatoes, chicken breast, avocado, cucumber, artichoke hearts, feta cheese, roasted red bell pepper, olives, parsley and red onion. Drizzle or toss with the Greek salad dressing. Serve with sliced pita bread on the side.

This salad is amazing! My husband and I loved it! Just a warning… if you plate your salads individually (instead of mixing one big salad altogether), start small, because with all the toppings, the salad can become huge. I loved the different flavors together, especially the salty tang of the kalamata olives. The chicken, though… THAT it was caused me to obsess about this recipe until I tried it. I LOVED the chicken!
